Yellow tomatoes are healthier than red tomatoes. They contain more vitamins, micro- and macronutrients and, most importantly, lycopene (a carotenoid pigment). It can be used in fish soups , fried chicken and any kind of meat of in traditional Greek recipes it goes perfectly to traditional ''Lahanosarmades with egg-lemon juice , ''avgolemono''- which is meatballs stuffed into cabbage. Of course it can be used as the base of spaghetti sauce !!!
