Afrina is produced only in the salt pans of Messolonghi, as the appropriate climatic and soil conditions exist here (shallow sea, minimal waves, moderate winds, bottom without slopes). A thin crust of the first salt is created on the surface of the salt pans. Little by little, with the wind, this crust will be carried away and deposited as foam on the sides of the salt pans (hence the local name “afrina”). Then, when this foam dries, it is collected exclusively by hand by specialized workers with wooden tools; an ancient technique known to those who collect it. Afrina is the first harvest of the salt pans: as soon as its collection is finished, the collection of the salt will begin.
It is the purest form of salt and has a completely different taste than table salt. Afrina is sweeter with a less intense salty taste and, for this reason, is well-known and sought after by confectioners. Its crystals are crunchy and aromatic, creating explosions of flavor in the mouth. It is the ideal seasoning for raw foods and salads, while a few Afrina crystals in roasts a few minutes before the end of cooking will enhance the flavor without drying out the meat. Awarded a silver Quality Medal at the Olymp Awards 2018.
It is a 100% natural product with great nutritional value, as it contains 96 minerals and trace elements in ideal proportions.
