Butterfly PEA Blue Tea

Butterfly pea flower tea, commonly known as blue tea, is a herbal tea made from the flowers of the Clitoria ternatea plant. Extraction of the flower produces a decoction with a beautiful and intense blue color. It also has the property that the extract changes color based on the pH level of the substance added to it, for example adding lemon juice to tea will turn it purple.

It is widely known in most Southeast Asian countries since it has been consumed for centuries by the local populations. Clitoris flowers or blue pea flowers are also used for their medicinal properties in Ayurveda.
