RECIPE
BLACK EYED BEANS
MATERIALS
- 250g black-eyed beans
- 1 onion, chopped
- 1 sc. garlic, chopped
- 1/2 leek, chopped
- 1 tbsp tomato paste
- 400g tomato concache
- 1 lt vegetable broth
- 2 bay leaves
- Salt/ Pepper/ Olive oil
IMPLEMENTATION
Place a deep pot on high heat, pour the beans in, fill with water until we cover the beans and boil them until they boil. Then, strain them and set them aside. Then, place the same pot on medium heat and let it burn. As soon as it burns, add a little olive oil, the onion, the garlic, the leek and sauté them for about 3 minutes, stirring with a wooden spoon at regular intervals. Then, add the tomato paste and sauté for 1 minute. Pour the rest of the ingredients into the pot along with the beans and simmer for 35-40 minutes until the beans soften and the sauce thickens.
