The Thyme honey collected from places and parts of the Cretan land with a strong presence of thyme, the result is great pollen quota, which one realizes as soon as one tries it!

Thyme honey, although it corresponds to only 10% of Greek honey production, has been identified like no other with Greece itself, it thrives mainly on the Greek islands.Indeed, even the tourists from abroad who come to our country for the sun and the sea, it is impossible not to have noticed these wonderful aromatic blooms which in Greece are found in 23 native species: a dense and compact bush, with many branches and flower color between purple and fuchsia.

Thyme, the ancient thyme, in the Greek islands usually blooms from mid-May to August. The aromatic flowers (as well as the leaves) especially of the wild thyme capitatus characterize its bushes that cling to unexpected places of the earth that penetrate into rocks that attract, throughout the summer, the bees that search for them incessantly. This is why thyme Greek honey is always awarded and is considered by many to be the master of Greek beekeeping.

The use of thyme honey in the kitchen

In cooking, honey is always best used without any heating or cooking so that it does not lose its beneficial properties. It is usually added to herbal teas and hot drinks. A spoonful of thyme honey in the cup is enough to offer all its benefits. Thyme honey can also become an ingredient for a healthy and quick snack, spread on well-toasted black or wholemeal bread and accompanied if you like with slices of fruit, such as the classic autumn pears that marry perfectly with the aroma of this honey. A good seasonal fruit salad with some thyme honey and some dried fruit seeds such as hazelnuts, walnuts, cashews and pine nuts can be another great snack for growing children.

TASTE: The taste of thyme honey is very similar to that of eucalyptus, perhaps because it shares the aroma of the essential oils that remain in the honey itself and give it a special taste. Its sweetness is moderate but remains persistent on the palate leaving a balsamic aftertaste.

AROMA: Thyme honey has a strong, spicy aroma, reminiscent of aromatic wood, mulled wine and cloves.

COLOUR: Its color is amber with a tendency towards brown.

CRYSTALLIZATION: Usually with time and the drop in temperature, honey solidifies. In the case of thyme honey, it crystallizes into a fine grain with a very solid consistency, a process that happens quite slowly due to the fructose it contains (6-8 months).
