The sweet vinegar from Agiorgitiko is slowly boiled together with petimezi until it becomes a thick velvety cream. Just before the end, whole mandarins from Chios are added, which give the final product its characteristic aroma. The result is a natural, sweet Balsamic cream with balanced acidity and tangerine notes. Ideal for glazing grilled mushrooms and vegetables, for sweet and sour sauces, as an ingredient in marinades and as an extra touch in green salads.
