Trachanas is a pasta made from flour and milk and has a granular and irregular shape. It comes in different varieties, sour and sweet, thick and fine. Sour trachanas is made from cow's or sheep's or goat's milk, which has been soured or from yogurt together with wheat flour or broken wheat or semolina or a mixture of wheat and semolina, getting the corresponding color. Sweet trachanas, on the other hand, is made from raw milk that has not been soured, which is why it is sweeter.
