We carefully pick the olives by hand when they are still green to orange and almost ripe, separate them by variety and grind them within 5 to 7 hours in our own olive press, at temperatures below 28°C, without adding water.
The result is an olive oil of exceptional quality and freshness, an olive oil that makes us truly proud.
