Fully ripened black olive, slightly wrinkled, naturally pickled - fermented in dry salt. Low salt content (less than 2%) compared to similar products. It is not heat treated or contains additives.  The thrompa olive is a delicious olive, designated P.O.P., it has a unique texture and taste, which ranks it at the top of the species. We have known the Thastian "Veluitinos" clots for years and we believe that they still express the product in the best way.
They come from the olive groves of the producer Evangelos Kaltsa in Thassos and are processed using a gentle technique, without heat treatment. The microclimate of the island and the very old olive trees of the family olive groves give an excellent fruit and the right management highlights its flavor in an excellent way: the olive is picked from the tree ripe, already wrinkled and goes directly into the salt, where it will remain for a long time . It is then packaged in a modified atmosphere that prevents oxidation, without any preservatives, thus preserving its original organoleptic characteristics. The successful version "with minimal salt" deserves a special mention: we preferred them because they preserve the natural flavor of the olive and are extremely tasty, sweet, with the characteristic bitterness of the clot, which makes it so appetizing.
